The Holy Crêpe! ® Peace, Love, and Ham TM Savory Crepe

Crepe:
2 eggs
3 tablespoons oil
1 teaspoon vanilla
1 cup skim milk
1/2 cup flour
1 tablespoon sugar

Filling:
1/3-1/2 cup swiss cheese or gruyere cheese, shredded
1 slice ham (or several small slices)
1 tomato diced
dash salt
dash pepper
1 tablespoon parsley (optional)

1 Mix crepe ingredients together well.
2 Allow batter to sit for 30 minutes.
3 Drop 1/2 batter on skillet and medium heat for 3 min per side.
4 Lay the crepe flat on a pan or griddle over medium heat.
5 Arrange the cheese and ham on the crepe to cover the top half of the crepe.
6 Cook until the cheese is nearly all melted.
7 Spread 1/2 of the tomatoes over the cheese and ham.
8 Add salt and pepper to taste.
9 Fold the bottom half to cover the top half, then fold the right quarter over the left quarter.
10 Cook on both sides if needed.
11 Remove crepe to plate.
12 Garnish with minced parsley, if desired.
